TYPES OF CHEESE
FRESH PASTUERIZED:
- QUESO
FRESCO (feta style), is also called the "Goat cheese of
the Andes" This cheese is like a young feta, never having been submerged
in a salt brine. It is great on salads and melts over pasta or pizza
and can be sliced thin for sandwiches.
- QUESO
CREMA (chevre style) is a spread for bagels, or a dip for
artichokes or strawberrys. The tanginess delights your tastebuds.
It is a low-fat alternative to cream, sour cream or yogurt in recipes.
AGED CHEESE:
- QUESO
CABRERO (manchego style) is a 60-day cheese optionally dipped in red
wine to make a "crust". It retains all the flavor of the
lovely pasture that the goats eat. Perfect as an appetizer or dessert
with a fine wine or port, it is also a real hit grated on soup, salad
& pasta.
