Question of the Month? What is meant by the tannin in the wine? Tannin is a natural compound that comes from the skins, stem and pips of the grapes. It acts as a preservative and without out it certain wines could not be aged. Red wines have higher tannin level than whites, because reds are left to ferment on their skins. Tannins are also found in the oak of oak barrels, and some tannin is extracted during barrel aging, increasing the total tannin in any red or white aged in oak. In young wines, particularly reds, tannin can be very astringent and make the wine taste a little bitter but with time the tannins mellow.
